The Best Vegan BLT

I literally work up in the morning dreaming about a BLT. A juicy tomato, with plant-based bacon, was really calling my name. Though I didn't use bacon from a pig and I didn't use lettuce, this is still truly the best vegan BLT.


Ingredients:


Sandwich

4 Slices of Plant-Based Bacon (Sweet Earth Benevolent Bacon is our favorite)

1 ripe tomato, sliced

Handful of Spinach

Avocado

4 slices of whole wheat bread, toasted

Extra Virgin Olive Oil for pan-frying


Garlic Aioli

3 garlic cloves

1/2 tbsp of Extra Virgin Olive Oil

2 tbsp of Vegan Mayo


Directions:

Pan-fry your plant-based bacon with extra virgin olive oil. Flip after 2-5 minutes, according to the packaging. Place on a plate with a paper towel.


Next prepare your garlic aioli with all three ingredients in a bowl or blender. Mix or blend together. Set aside.


Assemble your sandwich on toasted bread. First, apply your aioli to one or both slices of toast. Layer spinach, a slice or two of avocado, tomato, and your plant-based bacon to your sandwich. Close your sandwich with another piece of bread.
